Our friends at Wee Buns Cookery School provide some of the best hands-on baking and cooking classes in Northern Ireland. Mary Anne is a chef with many years experience in the industry including working in renowned Michelin star restaurants. She has supplied this delicious Christmas cookies recipe so that you can bake with ease and confidence. This recipe makes roughly 25 cookies.
Ingredients:
- 255g plain flour sifted (plus a little more if needed)
- 95g butter
- 75g light brown sugar
- 2 tablespoons golden syrup
- 1 tablespoon treacle
- 1 tablespoon water
- ½ teaspoon bicarbonate of soda
- ½ teaspoon ground ginger
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- Royal icing sugar (to decorate)
Method:
1. Preheat oven to 180C / 160C fan. Line 2 baking trays with baking paper.
2. Put the sugar, golden syrup, treacle and water in a small pan and bring to the boil stirring all the time.
3. The stir in the butter and then the bicarbonate of soda and stir until well combined and the butter is melted.
4. Leave to cool a little.
5. Sieve the flour into a bowl, add the ginger, nutmeg and cinnamon and then stir in the hot mixture. Mix together until you have a firm, smooth dough. If it seems a bit soft add a little more flour.
6. Wrap in cling film and chill for about 20 - 30 minutes until firm enough to roll out.
7. Lightly flour your surface and roll the dough to about the thickness of a pound coin.
8. Cut out the cookies and place on the baking trays.
9. Bake in the hot oven for 8 – 12 minutes until lightly golden and just firm to the touch.
10. Transfer to a wire rack to cool.
You can use a little skewer to make a hole at the top of the cookies when still warm if you would like to hang them as decorations. When cool decorate as desired with royal or glace icing.
