Tullymill Restaurant is known for it's welcoming atmosphere and delicious dishes. They have provided this recipe for you to recreate. Pigs in blanket sausage rolls with creamy Sperrins blue cheese and cranberry! This recipe serves 12.
Ingredients:
- 2 packets of puff pastry ready rolled Sheet 320gs
- 2 Tsp sesame seeds
- 1 egg
For the filling:
- 1 kg sausage meat
- 1 tsp dried mixed herbs
- 1 tsp salt
- 1 tsp cracked black pepper
- 2 tbsp of Tullymill cranberry sauce
- 100g Fresh bread Crumbs
- 12 slices of Doherty's sliced Streaky bacon Dart Mountain Sperrin Blue Cheese
Method:
1. To prepare the filling, mix the sausage meat, dried mixed herbs, breadcrumbs, salt and pepper in a food processor.
2. Remove the puff pastry from its packaging and place on a counter lightly dusted with flour.
3. Spread the cranberry sauce in the centre of the puff pastry, layer cooked bacon slices and thinly sliced cheese on top.
4. Pipe sausage filling over the cheese and bacon layers, roll and cut the pastry to create one long tube.
5. Cut the sausage rolls into desired sizes, brush with egg wash sprinkle with sesame seeds.
6. Bake for 25 minutes at 180oc until golden brown.
