This Christmas Bannock is a lovely modern twist on the traditional Soda bread. Supplied by Tracey's Kitchen Farmhouse from their 17th Century thatched cottage to your doorstep. It’s absolutely delicious and of the festive season. Enjoy it toasted with lashings of butter and a wee cup of tea!

Ingredients:

  • 250g – soda bread flour or 250g plain flour with a teaspoon of bicarbonate of soda
  • 30g dried fruit (sultanas and raisins)
  • 30g dried cranberries
  • Teaspoon of cinnamon
  • Teaspoon orange zest
  • 25g caster sugar
  • 200 – 250ml – buttermilk
  • Demerara Sugar to top the Bannock

Method:


1. Butter your cake / loaf tin.
2. Mix all ingredients except the buttermilk together
3. Add buttermilk and mix well. The mixture will be soft.
4. Put into a baking tin.
5. Sprinkle with Demerara sugar
6. Bake at 160 c or 320 f for 35 minutes or until your knife comes out clean and it’s golden on top.
7. Lather with butter and enjoy!!
