Paul is constantly finding new and interesting locations to excite diners and host his incredible dining experience, while staying true to his belief that the Mournes and their surrounding areas are home to some of the best, if not the best, produce in the world.

Your evening begins with intrigue and mystery as your destination is unknown. Armed only with the knowledge of a meeting point, you'll arrive to be whisked away to the secret dining location. It'll perhaps be a rural cottage, a disused barn, a candlelit teepee or something different altogether. As Paul says, no two events are the same and he “loves to have fun with people”. This all adds to wonder of the evening; an element of surprise and delight before you've even started.

On arrival you’ll be handed a delicious aperitif to tantilise your tastebuds, before settling into your seats and beginning your culinary journey. Paul doubles as compère for the evening, welcoming you to the experience and talking you through each of the courses and the elements they're comprised of. He discusses his intention behind each beautifully presented dish and information on the high quality ingredients sourced for each of the courses. Paul’s passion for local produce is obvious and inspiring, and as each course is served, the conversation between guests flows, with plenty of laughter against a soundtrack performed live by a local musician. The whole evening is relaxed and informative, with the food playing a starring role.
